Originally from the pays Basque, a region well known for its hearty and generous Cuisine, Jean Marc Lemmery has always had the passion for good food flowing in his blood. Trained as a physiotherapist, he realized at the age of 39, that his real passion, the one of his origins is inside a Kitchen.
Roasted sweetbreads with brown butter, roasted salsifies au jus, "but a real one" as he mentioned, big game terrines as he learned from the 3 star Michelin Chef Amat and all pig by products are his features that he loves to describe as "authentic, rustic and most importantly from the heart".
